The background concentration of nitrite in the test group (bilateral ablation of the parotid glands) was significantly lower than that in the control group (P < 0.001). No significant change of nitrite concentration was found in the control group after nitrate loading. Restoration of nitrite concentration to normal level of the control group was found in the test group after nitrate loading.
