Department of Biochemistry and Nutrition, Meharry Medical College, Nashville, Tennessee 37208, USA Lipids in bovine gingival tissue have been characterized. Major lipids are phospholipids, cholesterol esters, glycerides, free fatty acids, and cholesterol. Phosphatidyl choline, phosphatidyl ethanolamine, and sphingomyelin are the major phospholipids. Major fatty acids are palmitic, stearic, oleic, linoleic, linolenic, and arachidonic.
